To reverse (or mirror) text in a document, you must first enter the text in a text box. After reversing the text, you can remove the appearance of using a text box by removing the outline.

To flip the picture/text (since there's no Arrange menu in Word) do this: Select the picture (and you'll need to turn text into a picture first per the instructions in John's link or else using a graphics app).
